Recipe for Adventure
La Plazuela Ratatouille
Yield: 1 Quart
Ingredients:
- 1 cup eggplant, medium diced
- 1 cup zucchini, medium diced
- 1 cup yellow squash, medium diced
- 1 cup roasted red bell pepper, medium diced
- 1 cup sweet onion, medium diced
- 1 cup roasted plum tomatoes, medium diced
- 2 guajillo chiles, steeped and pureed
- 1 oz. olive oil
- 1 tablespoon chopped garlic
- ½ bunch of cilantro, chopped
- 5 basil leaves, chopped
- salt & pepper to taste
Method:
- Heat oil in large skillet, once hot, caramelize the onions.
- Add garlic, squashes, bell pepper, eggplant, tomatoes.
- Bring this to a simmer and add the chile puree
- Simmer for 15 minutes, add herbs, salt & pepper to taste
