Green Chile Stew
Yield: 4-6 servings
Ingredients:
1 quart pork stock
1 pound 80/20 ground beef
2 cups diced medium Hatch green chile
1 cup diced red potatoes
½ cup diced onion
1 cup diced tomato
Black pepper and salt to taste
Method:
· In a large pot over high heat, bring pork stock to a boil
· Turn heat to low simmer
· Brown the ground beef and strain off excess grease
· Add green chile, potatoes and onions to beef and cook for five minutes
· Add the mixture to the simmering pork stock and bring back to a boil
· Turn heat to low and simmer until potatoes are fork tender
· Stir in tomatoes
· Add back pepper and salt to taste
