Recipe for Adventure

Tortilla Soup
Yield: 8-10 servings

1 ½ gallons chicken stock or water mixed with chicken bouillon
1 5-pound stewing hen cut in half
1 cup diced onion
½ cup diced carrots
½ cup diced celery
1 cup diced tomatoes
1 garlic clove, peeled and smashed

3 guajillo chiles, stems and seeds removed
½ cup diced tomatoes
¼ cup diced onion
1 whole, peeled garlic glove
Pinch of oregano
Pinch of salt
¼ cup water


Method:

· In a heavy-duty stockpot, bring chicken stock, stewing hen, onions, celery, carrots, tomatoes, and garlic clove to a boil over high heat
· Turn heat to low, cover, and simmer for about two hours
· Once cool, remove meat from chicken and reserve for garnishing soup
· Set the broth aside

· Steep chiles in hot water for 30 minutes until soft

· Roast tomatoes, onion and garlic at 500 degrees F until brown

· Puree roasted tomatoes, garlic, and onion with chiles, oregano, salt, and water

· Add this puree to the chicken broth, bring to a boil, and simmer for 30 minutes

· Strain

· Garnish soup with diced avocado, pulled chicken meat, grated asadero cheese, and fried tortilla strips
