Chilled Mango Soup

Yield:  ½ Gallon

Ingredients:
5 pounds mango, peeled and diced
8 ounces carrot, small diced
8 ounces celery, small diced
4 ounces onion, small diced
2 ounces vegetable oil
16 ounces coconut milk
Fresh lime juice to taste
Salt and white pepper to taste

Garnish:
1 avocado, small diced
1 mango, small diced

Method:
  • In a 1 gallon sauce pot heat the oil, sauté the carrots, celery and onion until translucent. Do not brown.
  • Add mango and coconut milk and bring to quick boil then turn off heat.
  • Puree in blender and chill
  • Add seasonings to your taste
  • Serve cold in chilled bowls and garnish with diced mango and avocado.
