Ethel’s Chicken Salad
Yield: 2-4 servings
2 ½ cups grilled chicken breasts, diced and thoroughly chilled
2 tablespoons diced red onions
½ cup mayonnaise
1 poblano chile, roasted, peeled, seeded and diced
3 tablespoons pecans, roasted and chopped
2 tablespoons red bell pepper, cut into 1/8-inch cubes
2 tablespoons yellow bell pepper, cut into 1/8-inch cubes
½ Granny Smith apple, diced
2 tablespoons roughly chopped golden raisins
Salt and white pepper to taste
Method
· Place grilled, chopped, and chilled chicken into a large bowl.
· Add remaining ingredients and mix well.
· Add salt and pepper to taste
